seasonality. Make your choice of tasting menus bursting with dishes
of unique flavour combinations and ingredients before watching the
drama and creations of Head Chef, Matt Gillan and his team
unfold.
Matt
Gillan joins Great British Menu
Great British Menu returned to BBC2 for an
eighth series early in 2013. Chefs from eight regions
competed to win the opportunity to cook for a series finale banquet
and Matt Gillan, Head Chef of The Pass restaurant in Sussex was
delighted to be asked to take part.
With Comic Relief in mind, the chefs were
challenged to create dishes which taste amazing but also bring a
smile to the faces of the judges and this year included a
number of leading UK comedians and comedy writers! The dishes they
presented must celebrate the fun of Comic Relief.
Matt had great fun coming up with some really imaginative ideas
and although did not make it to the final made a great impression
in his first year on Great British Menu. We hope to see him return
to compete again next year!
the
pass IS awarded FOUR AA Rosettes! September 2012
We are thrilled to announce that The
Pass has been awarded the prestigious accolade of four AA
rosettes. The AA states that restaurants awarded with four
rosettes are “among the top restaurants in the UK, where the
cooking demands national recognition. These restaurants exhibit
intense ambition, a passion for excellence, superb technical
skills, and remarkable consistency. They will combine appreciation
of culinary traditions with a passionate desire for further
exploration and improvement. There are very few restaurants with
Four AA Rosettes.”.
Says Matt Gillan, head chef: “We’re absolutely
delighted to be awarded a 4th AA Rosette. I am tremendously proud
of the team who continue to work hard year after year. To have our
hard work recognised is fantastic.”
The Pass is awarded a Michelin Star!
It was with great honour that The Pass became one of only a handful
of restaurants awarded its first Michelin star in October 2011. The
Michelin guide is arguably the most revered restaurant guide
amongst chefs, restaurant critics and guests alike.
Having opened our doors in November 2008
we were delighted to have been awarded 3 Rosettes by the
prestigious AA Restaurant Guide 2009 just 3 months later! A few
years on and we are delighted to have consistently retained this
award. To receive a Michelin star in addition to this was fantastic
achievement.

Tasting Delights
The Pass specialises in and only offers tasting
menus: a number of small 'taster' dishes that complement each other
to make a complete menu of various courses rather than a typical
number of substantial dishes. The aim is to provide you with a
fascinating journey of foods, flavours and textures that you might
not ordinarily come across, giving you a dining experience, rather
than just a meal. Let us whet your appetite with a selection of our
available menus.
