Our extensive wine cellars are amply
stocked with carefully selected wines from around the world and are
the ideal accompaniment to your dining experience. We are
particularly proud of the range of award-winning artisan local
Sussex wines all sourced within 15 miles of the hotel.
Our Restaurant Wine List
Our sommelier has produced an uncomplicated
wine list to match the informal dining experience with a modest
selection presented; however our full and extensive wine list
contains over 200 examples of fantastic new and old world wines,
ranging from rare vintage 1st growths, to summer thirst
quenchers. If you prefer to see the complete list, just let
us know. The hotel sommelier of always on hand to answer your
questions, offer guidance, or make a recommendation; pairing food
and wine is his specialty!
The
wine list
Everything by the glass
Another Exclusive Hotels initiative is to
offer every wine on the list by the glass. So if you would
like to indulge in any of our wines but don’t want the whole
bottle, you can order just one glass with your meal at our
restaurant in Sussex.
Sussex Artisans
With our food being source locally we couldn’t
overlook the same opportunity with our wine list, especially as we
have so many award winning vineyards just a stones throw away.
The Sussex Downs boast the same soil type as
the Champagne region of France, and many Sussex vineyards use the
same grape varieties and ancient production methods as the best
Châteauxs, so you should not be surprised by the fantastic award
winning wines we have chosen for our list.
Nyetimber Vineyard,
near Pulborough, West Sussex, produces some of the best sparkling
wine in the world and is rumoured to be favoured by The Queen.
Bookers Vineyard in Bolney, West Sussex
has been producing wine since 1972 and have won many awards over
the years. Nutbourne Vineyard,
Nutborne, West Sussex, first planted in 1980 grows seven different
grape varieties and all wines carry the EC standard of “Quality
Wine PSR” the highest grade for the UK.

We work avidly with our 10 wine suppliers to
offer a well rounded and comprehensive range for you to enjoy and
sometime direct with the vineyard.
To broaden the opportunity of trying some of
the world's finest and rarest wines, we have created a company
policy to 'cap' margins at the higher level of the wine list. Wine
aficionados will survey a comprehensive and well thought out list,
with some tantalising and unexpected wines but will be equally
astounded to see them presented at such agreeable pricing.
