Locally sourced produce, seasonal
ingredients and imaginative combinations are the key focuses for
Executive Chef, Lewis Hamblet when creating dishes and planning
menus.

Chef has created a selection of superb private
dining menus that can be coupled with the finest wines to perfect a
dining experience that is sure to delight your guests. He is
more than happy to sit and chat through individual requirements and
create a menu just for you if you would like the choices to be a
little more personal. It’s just a part of what makes private
dining in Sussex at South Lodge so special.
Delicious canapés include quails egg and
soldiers, anchovy parmiere and smoked chicken and mango on
toast.
Starter suggestions are Chicken liver parfait,
Kumquat compote, basil toast and homey roasted walnuts and Cured
salmon assiette, rum gravedlax, wasabi and beetroot with celery
cress and crispy onions.
Followed by Loin of South Downs lamb Niçoise,
char grilled potatoes or Halibut fillet, crushed potatoes, spinach
an cep cream, dried cherry tomatoes and short beans.
And for the finale, tangy lemon and praline
tortem ginger crème anglaise, mascarpone sorbet or Sticky toffee
pudding, caramelised apple, Madagascar vanilla ice cream.
We ask for guests in private rooms to choose
set menus for their guests with special dietary requirements
catered for individually.
