Camellia Chefs take great pride in serving
seasonal, honest and skillfully prepared food with
personality at our restaurant in Sussex. They deliver an eclectic
menu combining a range of classical dishes with the actual
ingredients are sourced as locally as possible.
The Exclusive Hotels initiative, 'Food Heroes', is a proactive
campaign to support and promote local food producers and
suppliers.
On the door
step
Months of planning and hard work are now
paying off, with an abundance of produce being delivered into the
kitchen straight from our very own restored wall kitchen
garden. Fresh herbs, vegetables and fruits picked not 100
yards from the kitchens back door, and delivered just minutes after
harvesting so the restaurant's local produce is as fresh as
possible.
The grounds team work together with the chef’s
to plan the seasons produce and the daily menus reflect what is
ripe and ready for picking.
No food
miles here
Our Executive Chef works avidly with
local suppliers and together they research and source the finest,
freshest local seasonal produce allowing him and his talented
brigade to develop delicious and varied menus.
'Food Heroes' also reduces the amount of ‘food
miles’ allowing the team to revive original, powerful tastes and
flavours often lost through travel. This can only be done if you
invest time proactively investigating the source and growing ethos
of fine ingredients.
Some of our favourite suppliers are:
- SK Hutchings, our local butchers from the
village of Partridge Green, a rare example of a family business
spanning generations. All their meat is locally sourced from
farms in the surrounding villages of Sussex and the homemade
sausages are fantastic!
- The Pure Oyster Company, again a family
business is based in Pease Pottage, who are committed to work with
south coast fishermen to provide us with the best product
possible.
- Downland Produce is a green grocer who is as
passionate about locally sourced fresh fruits, vegetables and herbs
as we are and therefore the perfect partner to supplement our very
own kitchen garden produce. Avidly searching for local
growers in Sussex to source produce to Chef’s exacting
requirements.
